When life gets hectic I want to be able to cook a healthy meal, but I want to do it quickly without needing a bunch of ingredients. I also like to mix things up a little and try new things. Well, I found a great post on Dietriffic, which is a very good blog on diet and nutrition that is authored by a Registered Dietitian named Melanie Thomassian.

Melanie wrote an article that was about 25 minimalistic meals with 5 ingredients or less. There are recipes for fish, poultry, red meat, pork, and vegetarian.

I am trying the Pesto Chicken Packets tonight for dinner. So far they smell great as they sit in their little foil packets on my Big Green Egg.
